Ingredients
- 1 cup unsalted veg stock
- 2 ripe plantains
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp black pepper
- ½ tsp salt
Method
- Preheat oven to 400 F. Add vegetable stock to a small saucepan. Heat the stock to a simmer and set aside.
- Place the plantains on a baking sheet lined with parchment paper, place in oven, and bake until the plantains are fork-tender, about 15–20 minutes. Remove them from oven. Place the plantains in a food processor with 3/4 cup of vegetable stock, nutmeg, cinnamon, salt, and ground pepper.
- Pulse the food processor about 10 times for a second at a time. The mixture will form a dough-like consistency. Remove the sweet plantain mash from the food processor. Place the mixture in a bowl lined with plastic wrap. Press down on the mixture to remove any air bubbles and then flip the mixture onto a plate. Remove the bowl and the plastic wrap and serve.
